Habib and Madar (not their real names) own a small restaurant in Las Vegas. I met them a few years ago when a friend told my wife and me about their place. We went there to check it out and have lunch. There were only about 10 tables and one other employee besides the owners. Habib waited the tables and Madar prepared the food. We had the chance to talk to them about their business and their plans for the future. The food was excellent and was focused on vegan and vegetarian dishes, something that wasn’t common in Las Vegas.
Fast forward a couple of years. In the worst recession in Las Vegas history, Habib and Madar expanded their restaurant and opened another one. The last time we visited, there were 10 employees and we had to wait for a table.
